Laboring Day…Spinach Lemon Pasta

Oh boy. I just needed something quick and easy tonight. I covered a class today for some colleagues, so they could take the day with their families.
Wheat pasta. I’m not a fan, but I usually buy it just because I *try* to eat somewhat healthy. I have to to counter all the freakin cupcakes I consume. Tonight I saw a box of Barilla Plus. It’s supposed to have more protein, Omega 3 and other goodness.
It tasted good. Yay!
Spinach Lemon Butter Pasta

Makes 2 main dish servings
Prep: 2 minutes Cook: 10 minutes
1 cup drained chopped spinach
2 T unsalted butter
1/2 Lemon Juice
salt and pepper to taste
