Simple Skillet Hamburger

One cooking method I’ve adopted since starting this blog is simple grill preparations. For most grilled items, I use only salt and pepper. I’ve used this method ever since I read an article from Andrea Meyers on turning a cheap cut of meat into something delicious.
I thought, if that method works on cheap steak, it should make a good cut of meat just as good. It does.
So, when looking up hamburger recipes for this weekend, I read an article from Bobby Flay on simple hamburger grilling that only had three ingredients: ground meat, salt and pepper, I knew that simple would be best.
And, since the the thermostat on my Arizona patio read 116, I knew that we would not cook those burgers outside.

Bobby Flay’s Tips for Pan Grilling a burger:
USING A SAUTE PAN OR GRIDDLE (PREFERABLY CAST IRON): Heat the oil in the pan or griddle over high heat until the oil begins to shimmer. Cook the burgers until golden brown and slightly charred on the first side, about 3 minutes for beef and 5 minutes for turkey. Flip over the burgers. Cook beef burgers until golden brown and slightly charred on the second side, 4 minutes for medium rare (3 minutes if topping with cheese; see step 3) or until cooked to desired degree of doneness. Cook turkey burgers until cooked throughout, about 5 minutes on the second side.
Add the cheese, if using, to the tops of the burgers during the last minute of cooking and top with a basting cover, close the grill cover, or tent the burgers with aluminum foil to melt the cheese.
Sandwich the hot burgers between the buns and serve immediately.
Let me tell you, these burgers were perfect. I like a steak medium-rare, but I tend to like my burgers cooked more well. So we cooked them 3 1/2 minutes on each side versus 3 minutes, but they weren’t crispy well, but just well enough.
We topped them with sauteed Vidalia onions and made a dijon horse raddish mustard mixture. Mmmm good.
