Chai Tea Mini Cupcakes

I think I may have mentioned once or twice that I do not like frosting. The sweet glaze on top of these Chai Tea Mini Cupcakes from Martha Stewart’s Cupcakes book is amazing. If this is frosting, then sign me up!
Most of time when I see recipes for a tea inspired cupcake, tea is a minor ingredient, and other spices are added to enhance the tea flavor. What was unique about this recipe is that it called for tea infused milk.
I don’t know how much of a difference it made to the overall recipe, but these cupcakes had an amazing texture and great flavor.

In other news, Brian, the 22 pound cat, has impressed my new roomies his gymnastic abilities and we all hope that one day he’ll catch his tail.
Condensed Milk Icing
4 T unsalted butter, room temperature
1/2 cup plus 2 T sweetened condensed milk
3/4 cup confectioners’ sugar
With an electric mixer on medium high speed, whisk together butter, condensed milk and salt until smooth. Whisk in confectioners’ sugar, 1/4 c at a time, until combined, then whisk on high speed until thick and smooth. Use immediately.
